This is my second attempt at creating Jamie Oliver’s Polenta cake, with my first attempt I fudged it, using hazelnuts instead of almonds, and fresh orange juice instead of squeezed blood oranges. It’s those differences that creates a really good cake. Which is not dissimilar to photography, you have to create the right composition, balancing the image with props, and of course lighting to show the product in the best light and a little bit of retouching to embellish the overall aesthetics.
